I really need to get better about posting on here! I meant to post this on Valentine's Day, but I've been having a hard time making the choice to be on the computer when I'm home. I've been choosing to hang out with the family instead! So here are a few treats we made for Valentine's Day.
For breakfast, we started off with a fun version of eggs in a basket. I buttered the break, cut out a heart with a cookie cutter, put the bread in the frying pan, cracked an egg in the center, and fried until the egg was set and turned it over. It tasted kind of like French toast without the syrup and the whole family enjoyed it.
Then we made these fun little heart shaped jello treats. The only problem was I let the 2nd layer of white sit too long so it got too hard and we only ended up with 3 layers of jello. It was still good and the kids had fun making and eating it.
Then we made a cookie/brownie mix like Ali did a while back and baked it in a heart shaped pan. I tried to make a chocolate ganache topping but only had buttermilk and no heavy cream. I thought I could substitute the buttermilk for the cream, but turns out it doesn't work this way. Did you know that? After my failure I did some research and it looks like you can sub heavy cream for buttermilk but not the other way around. So as you can imagine, my chocolate ganache didn't turn out at all. We ended up just using some icing to put on some M&Ms and the kids liked it just as well!
My last dessert was from Annie's Eats, Red Velvet Cheesecake. I've wanted to try this recipe since I saw it awhile back, and thought what better occasion than Valentine's Day? I even went out and bought a springform pan because I've wanted one of these for awhile now too! Well, the cheesecake was a hit! The hardest part was waiting the 8 hours that was needed for it to chill in the fridge. Really, could you go wrong combining two of the best desserts ever? Red velvet cake and cheesecake? I don't think so... :)
Also, my husband and I have never really exchanged gifts for Valentine's Day. This year he surprised me with this new pair of Nikes to help me train for the mini! I was excited! For me, this was a much better gift than flowers and candy! :)
And the Valentine's the kids made for Daddy. Mamie could eat Mac 'n Cheese for every meal, every day so that was fitting for her. Nick wanted to color and elephants are his favorite animal right now, so also fitting...
We finally got mattresses and bedding for the bunkbeds that were made for us by my husband's brother for Christmas. So here is their gift as well! Something they needed and they love their new beds! Notice the new crayon drawings on the wall, door, and bed. Future artists? Have a great night!!
