Happy Birthday, Mom!...and another treat

Our Mom would have been 56 today.  Happy Birthday Mom!....(we miss you and will love you always!)  In honor of her, I thought I would make something that reminded me of her.  Growing up, our favorite cake was Red Velvet Cake with a cream cheese icing.  Mom made this for us each year for our birthday because she knew it was our favorite.  So here it was made in her honor.  Happy Birthday Mom!  :)  I'll share her recipe soon, but for now, you're stuck with just pictures (and getting ready for the Super Bowl with our Colts, I had to display them on football platters)! 


I also made a chocolate chip cheeseball recipe that a friend gave me a while ago.  I took it to a pitch-in at work today and it was a hit!  I had at least 6 people ask me for the recipe, so I'll share it here now!



Chocolate Chip Cheeseball Recipe

Ingredients
1 package (8 ounces) Kraft Philadelphia® - Cream Cheese, softened
1/2 cup butter, softened
1/4 teaspoon vanilla extract
3/4 cup confectioners' sugar
2 tablespoons brown sugar
3/4 cup miniature semisweet chocolate chips
Graham crackers



    Directions

    In a large bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually add sugars; beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours.
    Place cream cheese mixture on a large piece of plastic wrap; shape into a ball. Refrigerate for at least 1 hour.
    Serve with graham crackers. Yield: 1 cheese ball (about 2 cups).
