Since our friends who host the Wednesday night gatherings got married yesterday (more on the wedding to come!), the rest of us decided to give them a break and make dinner for them last week. Of course, as I've said before, I'm the self-appointed dessert maker so I decided to make strawberry shortcake. Then I saw this Red Velvet Strawberry Shortcake and my decision was made. I think it was a great choice, although that Amanda makes frosting cakes look so easy! I always look at her cakes and think "I can do that!", then halfway through I'm trying to figure out how I'm going to make it look somewhat presentable. This time I should've followed her recommendation to cover the cake layers with vanilla frosting first so that the cake doesn't peak through the whipped cream icing. I think if I would've done that and bought another carton of CoolWhip, I would've been good. Instead, I just covered my patchy whipped cream icing up with cake crumbs and strawberries. It tastes the same, right? Also, one of my white cake layers didn't come cleanly out of the pan, so I only did a 3 layer cake (and used part of the fourth layer for the crumb coating).
Because of bad storms here in Georgia (more on the storms to come too), we decided not to go to Rome after all. Instead, we hung out in our bedroom closet and watched the Weather Channel all night. Luke and I even fell asleep in the closet. We were lucky though, and while there were tornadoes and a lot of damage in the surrounding areas, we were safe and didn't get any damage. You know what this meant though...Andy and I had an entire cake to eat! Luckily, I found some good friends to share it with (whose family was not so fortunate - their parents' house was hit by a tornado, badly damaging the house and downing trees all around it).
This cake is really good...light and fluffy! It looks cool when you cut into it too with the red velvet and white cake layers. I ate it for breakfast two days last week. Healthy, I know, but since it has a bunch of strawberries in it, it's not that bad for me, right? At least that's what I tell myself!
